This weeks guest is an award winning Chef and sustainability expert Calum Richardson from The Bay Fish and Chips

Sustainability might not be a term you'd expect to be associated with 'A Chippy' but believe me when I tell you Calum has created much more than that in his ~20 years as a chef.

Calum worked at The Navy before embarking on this career and has brought the discipline and attention to detail into his various ventures in hospitality since. He now even supplies the ships he used to sail on in the Navy such is the quality that his business produces.

He's also driven the sustainability agenda in his industry through changes in traceability, elimination of waste, and sustainable fishing. With COP26 on Scotland's doorstep, sustainability has never been more important and this episode is a cracker where we touch on the Netflix documentary Seaspiracy and how we can do more to create less waste as businesses and people.
